Fresh Plum Flan

3/4 Cup Sugar
1/4 Cup Soft Margarine
2 Each Egg
1 Cup All-Purpose Flour
1 Teaspoon Baking Powder
1 Teaspoon Orange Rind Or Lemon Rind, Grated
1/4 Cup Milk, Skim
2 Cups Plums, Halved And Pitted
1/2 Cup Packed Brown Sugar
1 Teaspoon Cinnamon

In large bowl and using electric mixer, cream together granulated sugar and margarine; beat in eggs one at a time, beating well after each addition. Combine flour, baking powder and orange rind; beat into egg mixture alternately with milk, making three additions of flour and two milk. Turn into greased 10-inch springform pan. arrange plums, cut side down, in circles on top, lightly pushing into batter. Combine brown sugar and cinnamon; sprinkle over plums.

Bake in 350′ F oven for 45 to 55 minutes .

*Instead of plums, use 2 fresh ripe pears, peeled, cored and cut into 1/4-inch thick slices.
