Fiesta Cabbage Salad

750 ml green cabbage, shredded
750 ml red cabbage, shredded
375 ml corn kernels
1 can black beans, drained & washed
125 ml cilantro, chopped
125 ml green onions, chopped
125 ml cherry tomatoes
250 ml olive oil
125 ml balsamic vinegar
15 ml grainy texture mustard
250 ml fresh lime juice
2 ml sugar
– salt & pepper to taste –

In a large bowl; combine cabbages, corn, cilantro, onion and tomatoes.
In a covered container; add oil, vinegar, mustard, lime juice, sugar and salt and pepper; shaking well. Pour dressing over cabbage mixture; blending well. Chill for at least one hour.
