serves 2 as a meal – or 4 as a side dish
Serve as a dip with – 16 oz bag of Tortilla Chips or as a dish on 8 -12 oz of vermicelli pasta.
Also excellent as the main fill ingredient in burritos, tacos, and wraps
1 cup of freshly diced very ripe tomatoes
1 tablespoon of dried Basil
1/2 cup of finely diced Spanish onions
1 teaspoon of dried Oregano
1/4 cup of diced green Spanish olives
2 tablespoons of black pepper
3 ounce of Herbal extra virgin olive oil
1 ounce of extra virgin olive oil
the juice and pulp of 1 small lime
1 teaspoon sugar
Louisiana hot sauce to taste (I like it hot)
1/2 LB of diced cooked chicken
2 grams of dry shake (or the equivalent of 4 fatties)
Chop up the ingredients and mix in a bowl. Let stand for an hour to allow the spices to merge,
The tomatoes can be either Field or Roma tomatoes; in either case very ripe is important.
You can make it chunky or dice finely as to personal taste; my preference is fine.
You can add green onions to the Spanish onions if you like to add color.
My preference is green olives, but spicy black olives can be used instead, for variation.
By adding a 50/50 mix of the juice from the jar of olives to the olives, you increase the flavor.
For best results, use the meat from fresh chicken hind quarters that you get from a whole chicken being used for broth, & added to the salsa that has been already been allowed to stand. For gourmet results squeeze half of a lime over the hot chicken before blending with the mix and serve within 5 minutes.
When you use it over pasta. you should add a little more olive oil.
NOTE:
This recipe has virtually no shelf life. The flavor gets stronger the longer it sits. Eat it the same day.
For best results; when served with tortilla chips is to refrigerate for 2 hours before serving
For best results, when served with pasta is to use room temperature ingredients.
This recipe is excellent as the center filler in a 3 egg folded omelet.
When served over hot vermicelli pasta add a little more oline oil.
This pasta dish is a meal by itself or an excellent side dish for lemon herb chicken & sauté ed fish.
