Embarrassing Braised Lamb Shanks

2 meaty lamb shanks
1/2 tablespoon olive oil
1/2 tablespoon butter
(note that the oil and butter are optional so long as you are using a nonstick pan)
1 jar commercial spaghetti sauce
Olives, canned mushrooms, pearl onions, sliced carrots, whatever
strikes your fancy (REALLY optional)

I call this Embarrassing Braised Lamb Shanks because they are ‘way too easy.

Serves 2

Preheat oven to 350. On stove top, heat an oven-safe pan over medium-high heat. When it is hot, add oil and butter. When it is smoking hot, add lamb shanks and sear to brown on all sides. (That means don’t move it unless you’re planning to turn it.) Remove from heat and drain off remaining fat. Add spaghetti sauce and optional ingredients. Cover pan tightly and place in oven. Bake for 1 to 1-1/2 hours, or until lamb is done and tender. Serve over hot noodles.
