Eggplant Relish

3 eggplants
1 onion
10 ml salt 2 tsp
50 ml brown sugar 1/4 cup
75 ml oil 1/3 cup
125 ml vinegar 1/2 cup
1/2 red pepper, chopped fine
1/2 green pepper, chopped fine

Bake eggplant on cookie sheet at 350 F (180 C) until soft but not burnt. Cool, peel and quarter eggplant. Grind or process with onion. Season with brown sugar, oil and vinegar. Add peppers. Mix; adjusting ingredients to taste. Can be stored in fridge for quite a while.
