Dijon-Tomato Macaroni & Cheese

500 ml macaroni, uncooked 2 cup
1 onion, chopped
45 ml butter or margarine 3 tbsp
45 ml flour 3 tbsp
500 ml milk 2 cup
salt & pepper to taste
175 ml swiss cheese 3/4 cup
175 ml cheddar cheese 3/4 cup
5 ml dijon mustard 1 tsp
396 ml can diced tomatoes, drained 14 oz

Cook macaroni according to package directions. Drain and pour into a greased 9 x 5 inch (2 L) casserole. Melt butter in saucepan and saute onion until soft. Add flour; stirring for 1 minute. Slowly add milk, season with salt and pepper. Cook, stirring over medium heat until slightly thickened. Whisk in mustard, add cheese and stir over low heat until melted. Pour over macaroni, add tomatoes mixing well. Bake at 350 F (180 C) for 30 minutes.
