Easy Rice Pancakes

2 cups Aunt Jemima Complete Pancake Mix
1-1/2 cups cooked rice
Syrup and butter (optional)

Beat pancake mix with 1-1/2 cups water in large bowl only until smooth. Stir in rice.

Pour batter onto hot greased griddle, using about 1/4 cup for each pancake. Cook until bubbles form on top and underside is nicely browned. Turn and brown other side. Turn ONLY once.

Serve with butter and syrup, if desired.

Makes about 12 (4-inch) pancakes.
