3 sm. apples, peeled, cored, and finely chopped
1-1/2 cup cooked rice
1 cup skim milk
8 dates, finely sliced
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon vanilla
1 tablespoon vegetable oil
3 eggs, separated
Preheat oven to 325 degrees. In large bowl stir together all ingredients except egg whites. Beat egg whites stiff and fold into apple-rice mixture. Turn into 1 1/2-quart baking dish. Set dish in larger baking pan on oven rack. Pour boiling water in larger pan to depth of 1 inch. Bake for 70 minutes. Serve warm or chilled.
