1/3 cup couscous
1/2 cup boiling water
2 teaspoon vegetable oil
1 hot red chili pepper, minced
1 teaspoon each dried thyme and curry powder
1/2 teaspoon each cumin, ginger and allspice
1/2 teaspoon salt
1/4 teaspoon each black pepper and paprika
1/8 teaspoon cayenne pepper
2 cloves garlic
1 lb ground chicken thigh
4 Kaiser rolls
3/4 cup grated Mozzarella cheese
4 lettuce leaves
4 tomato slices
Place couscous in a small bowl. Pour in boiling water and stir with a fork. Cover with plastic wrap and let stand 5 minutes.
Heat oil in a small skillet over medium heat. Add chili pepper and all seasonings. Stir cook for 2 minutes then let cool.
In a bowl, place couscous, spice mixture, garlic and chicken. Mix well. Shape chicken mixture into 4 patties. Grill on barbecue over medium heat for 3-4 minutes each side or until no longer pink inside. Place one tomato slice on bottom of each kaiser roll. Place burgers over tomatoes; top with mozzarella cheese, lettuce and top halves of rolls.
Makes 4 servings.
NOTE:
Burgers can also be cooked in a skillet or grilled in the oven
