1 medium onion, chopped
25 ml canola oil 2 tbsp
10 ml curry powder 2 tsp
2 ml granulated sugar 1/2 tsp
3 medium potatoes, cubed
175 ml water 3/4 cup
salt & pepper to taste
In a skillet over low heat; cook onion in oil until tender. Add curry and sugar; stir-fry 1 minute, ensuring curry doesn’t burn. Add potatoes; stir-fry until coated, about 2 minutes. Add water and bring to a boil; cover, reduce heat and simmer 8 to 10 minutes or until potatoes are tender. Uncover and simmer until liquid evaporates. Season with salt to taste.
