250 ml mayonnaise
2 tablespoons curry powder
2 tablespoons wine vinegar
450 g macaroni; or other pasta shapes
1 red pepper; diced
1 green pepper; diced
1/2 cucumber; peeled, seeded, diced
1 bunch spring onions; chopped
2 sticks celery; diced
25 g parsley; finely chopped
2/3 cup carrots; diced
8 tablespoons chutney
Combine mayonnaise, curry powder, and wine vinegar in small bowl. Set aside. Cook macaroni in salted water until tender; drain. Place warm macaroni in a large bowl. Pour sauce over warm macaroni and toss well to combine. Allow macaroni to come to room temperature. Add remaining ingredients.
