Creole Lima Beans

4 slices bacon
1 medium onion, chopped
50 ml green pepper, chopped 1/4 cup
1 garlic clove, minced
500 ml canned tomatoes 2 cup
5 ml sugar 1 tsp
2 ml ground thyme 1/2 tsp
1 can baby lima beans, drained (14 oz / 398 ml)
salt & pepper to taste
15 ml parmesan cheese 1 tbsp

In a large skillet, saute bacon until crisp. Remove from pan. Crumble and set aside.

In the same skille, saute onion, pepper and garlic until tender. Add tomatoes, sugar and thyme. Cook slowly for about 15 minutes, stirring occasionally.

Add beans, salt and pepper. Simmer until throughly heated. Serve hot, sprinkled with crumbled bacon and parmesan cheese.
