Creamy Potato and Vegetable Salad

1 kg potatoes, cooked & cubed 2 lb
2 red peppers, cubed
2 celery sticks, sliced
1 shallot, chopped
3 green onions, sliced
1 garlic clove, crushed
5 ml basil 1 tsp
15 ml fresh parsley, finely chopped 1 tbsp
45 ml half & half cream 3 tbsp
15 ml mayonnaise 1 tbsp
5 ml prepared mustard 1 tsp
2 ml sugar 1/2 tsp

Place potatoes in large salad bowl. Add other vegetables together with garlic and herbs.

Blend cream, mayonnaise, mustard and sugar in a small bowl, stirring until the mixture is well combined. Pour creamy dressing over the prepared potato and vegetable salad and stir gently to coat evenly. Serve salad garnished with finely chopped green onion.
