225 g fresh white mushrooms, thinly sliced
1/2 lemon, finely grated rind & juice
40 ml sour cream
2 green onions, finely chopped
In a large bowl; place mushrooms. Sprinkle with lemon rind and juice. Toss well. Gently stir in sour cream and season with salt and pepper to taste. Cover bowl and let stand, stirring once or twice, for 1 hour. Spoon salad into serving bowl and sprinkle with onions.
