1 lb chicken livers
1 cup chicken stock
1 onion sliced
2 cups butter or margarine room temp
salt and pepper
1 tablespoon cognac or to taste
In a pot combine, livers, stock, onion, and salt and pepper.Bring to a boil, and then simmer for about 10 minutes. Drain mixture. Place livers in food processor with, butter and cognac and blend smooth. Season again if desired. Refrigerate and stir now and then until mixture firms. Then place in a serving bowl or small crock. Cover and chill well. May be frozen
Yield: about 3 cups
