Cranberry Relish Mold

serves 20 or double & triple recipe

2- 9 ounce can (2 cups) crushed pineapple
2- 3 ounce package Cherry-flavored gelatin
1 cup sugar
2 cups hot water
2 tablespoons lemon juice
2 cup ground fresh cranberries
2 cups chopped celery
2 small orange (peel off, seeds removed), chop or cut into small pieces
1 cup chopped nuts

Drain pineapple, reserve syrup. Add enough water to pineapple syrup to make 1 cup. Dissolve gelatin and sugar in the hot water. Add reserved syrup and lemon juice. Chill until partially set. Add pineapple and remaining ingredients. Pour into molds. Chill overnight. Unmold.
