Cranberry Pecan Loaf (No Sugar Recipe)

2 cups bread flour
3 teaspoons baking powder
1/2 teaspoon nutmeg
1 teaspoon allspice
1/2 teaspoon cinnamon
1 cup skim evaporated milk
1/3 cup melted margarine
3 teaspoons liquid Sweet ‘n’ Low
1 egg, slightly beaten
1 cup chopped cranberries
1/2 cup chopped pecans
non-fat cooking spray

Preheat oven to 350F.
Sift together flour, baking powder, nutmeg, cinnamon, allspice and set aside.
Melt margarine and let cool, then add liquid sweetener.
Add beaten egg to margarine mixture.

Alternately add milk and flour mixture to margarine mixture, mix well.
Stir in chopped cranberries and pecans. Spray a loaf pan with cooking spray.
Pour batter into prepared loaf pan; bake for 1 hour.
Cool and wrap.
