500 ml raw cranberries, washed & coarsely ground* 2 cup
500 ml mandarin oranges, drained 2 cup
1 can crushed pineapple, drained
250 ml sugar 1 cup
1 cranberry, black cherry or strawberry jello (6 oz / 175 g)
500 ml boiling water 2 cup
4 celery stalks, chopped
*Note: Cranberries grind better if they are frozen.
Wash and sort cranberries; grind coarsely and add sugar. Mix well and set aside. Dissolve jello in boiling water and let cool. Add cranberries and sugar mixture, mandarin oranges, pineapple and celery. Mix well. Pour into a mold or dish and chill until firmly set. Unmold onto a plate. (If desired, pipe a design around edges and top with cream cheese).
