Cranberry Grape Salad

(note: you can substitute or add pineapple)

1-2 cups of fresh cranberries, ground up in a food processor or meat grinder
1 cup red grapes, sliced in half (and seeded, if need be)
1/2-1 cup of chopped walnuts or pecans
1 medium apple, peeled and diced

Optional:
Add to salad (or substitute for the apple), 1 small can of crushed or chunk pineapple (note: I actually like it better without the pineapple)

Toss the above ingredients together, then…

Whip:
1 cup of whipping cream, until light and fluffy (with fairly stiff peaks, but being careful not to overdo it and end up with butter). Stir in about 1/4 sugar (or more if the cranberries are particularly tart) and 1/4 teaspoon of vanilla. (note: you could substitute Cool Whip instead, if your tastes lean in that direction or you want this to be faster).

Fold the whipped cream into the cranberry mixture. Put in a pretty bowl and garnish with sliced grapes and whole nuts, or mint leaves and pineapple slices.
