Cottage Cheese and Peach Salad for 100

Servings: 100 Portions
Portions: 1/4 Cup Cheese plus 1 Peach Half

1-1/2 gallon (13 lb 8 oz or 2-No. 10 can) peaches, canned, halves
4 lb. lettuce, fresh, trimmed
1-1/2 gallon (12 lb) cottage cheese
2 tablespoon paprika, ground (optional)

Drain peaches; set aside. Separate lettuce leaves. Place 1 leaf on each serving dish.

Arrange peach half on each lettuce leaf, hollow side up. Place 1/4 cup (1-No. 16 scoop) cheese in each peach hollow. Garnish with paprika.

NOTE:
5 lb 8 oz fresh lettuce A.P. will yield 4 lb trimmed lettuce.
