Conch Chowder

8-9 large pieces conch, pounded then finely chopped by hand or in a food processor
1/3 pound bacon, cut into pieces
2 large onions chopped
5-6 large garlic cloves, chopped
2 1 pound cans tomatoes
2 medium green peppers, chopped
1 6 ounce can tomato paste
1 teaspoon poultry seasoning
1 tablespoon oregano
4 bay leaves
1-2 tablespoon barbecue sauce
1 teaspoon Tabasco sauce or to taste
Seasoned salt to taste
2 teaspoons freshly ground pepper
4 large potatoes, peeled and chunked
1-1/2 to 2 quarts water

Saute bacon, add onions, garlic and green pepper and saute until tender. Add remaining ingredients except conch and potatoes. Simmer for 40 minutes. Add conch that has been finely chopped by hand or in a food processor. Add potatoes. Simmer for another 40 minutes. Taste and add more Tabasco or pepper if desired. Sherry may be added at the end or served at the table.

Makes 10-12 servings
