Cold Cucumber Soup with Low Fat Yogurt

2 medium cucumbers, skinned
1-1/2 c plain low fat yogurt
1/2 teaspoon salt
1/4 teaspoon dried mint leaves or flakes
1/8 teaspoon white pepper

Cut 7 thin slices from one of the cucumbers. Set aside and save. Cut the remaining cucumber in chunks and 1/4 cup of yogurt into the blender. Blend until smooth. **This will be from the first cucumber**

Again, cut the 2nd cucumber into chunks and add to the smoothed mixture in the blender. Add remaining ingredients: OMIT the cucumber slices. They will be used for garnish** Blend on low speed until smooth.

Chill for at least 1 hour. Serve in chilled bowls and garnish with the sliced cucumbers and for a more added look, you can add sprigs of fresh mint or fresh parsely.
