Citrus Rice Pudding

2/3 c brown rice
1 c water
2-1/2 c milk
1/2 teaspoon grated orange rind (dried)
2 eggs
1/4 c white sugar
1/4 c milk powder
1-1/2 teaspoon vanilla

Cook rice in water, 1 c milk and orange rind (bring to a boil and then simmer for about 45 minutes). Combine remaining milk, egg, milk powder, and vanilla, then add to the rice and cook for about 5 minutes, until it starts to thicken. Put it into a casserole dish, then into a larger pan with water coming halfway up the casserole, and bake uncovered for 50 minutes or so at 325F.
