3 cups cooked rice
1 cup chopped apple
1 cup chopped carrots
1 15 oz can garbanzo beans, drained
1/2 cup frozen petit pois peas
1/2 cup coarsely chopped cashews
2/3 cup currants or raisins
3 scallions, chopped
1 tablespoon lemon juice
1/3 cup chutney
1/4 cup oil
1 tablespoon ginger, grated
1/2 teaspoon turmeric
garam masala
Toss the apples with a teaspoon of lemon juice. For the rice, I prefer to use Uncle Ben’s converted rice cooked with a Telma Indian style seasoning cube. This makes the rice yellow and gives the finished salad great color. Heat the chutney in the microwave. Whisk with the lemon juice and oil. Toss everything together and season to taste with garam masala. I use about 1/2 teaspoon.
