1/4 cup mustard, the coarser the better
3 tablespoons vinegar
3/4 teaspoon sea salt
1/2 teaspoon sugar
1 stick butter softened
4 tablespoons chopped chives, or 3 tablespoons chopped garlic chives
In a heavy saucepan mix together the first four ingredients. Gradually add the butter and whisk over low flame until sauce has reached a creamy consistency.
Remove from heat and stir in the chives. Use on roasts of all kinds or over green beans, broccoli, spinach or baked onions.
