Carrot and Banana Cake

125 ml butter 1/2 cup
250 ml brown sugar 1 cup
2 eggs
250 ml bananas, mashed 1 cup
125 ml carrot, grated 1/2 cup
5 ml vanilla 1 tsp
50 ml buttermilk 1/4 cup
425 ml flour 1 3/4 cup
10 ml baking soda 2 tsp
1 ml salt 1/4 tsp
1 ml baking powder 1/4 tsp

ICING
25 ml butter, softened 2 tbsp
250mL icing sugar 1 cup
1 ml instant coffee 1/4 tsp
10 ml hot water 2 tsp

In large bowl; combine butter, sugar and eggs. Beat well. Add bananas, carrots, vanilla and buttermilk. Mix well. In a separate bowl; combine dry ingredients. Add to creamed mixture and mix well. Spread in greased and floured 9 inch (23 cm) pan. Bake at 350F (180 C) for 30 to 35 minutes or until done. Cool completely before icing.

ICING:
Mix butter and sugar together in a bowl. Combine coffee and water in small cup. Add to sugar mixture and beat well. Spread over cooled cake.
