1/4 cup finely chopped onion
4 cloves garlic, minced
2 tablespoon tomato paste
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon ground allspice
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 lbs. lean ground beef (or turkey)
1-1/2 cups beer
6 hamburger buns
1 recipe Mustard sauce
lettuce, onions, tomatoes, etc.
In a large mixing bowl combine chipped onion, garlic, tomato paste, rosemary, allspice, salt and pepper. Stir in ground beef; mix well. Shape mixture into six 3/4 inch thick patties. Place in a shallow baking dish. Pour beer over burgers, reserving 1 tablespoon for Mustard Sauce. Cover bowl tightly; refrigerate up to 24 hrs., turning burgers once.
Remove burgers from refrigerator; pour off any excess liquid and discard. Grill burgers on the grill rack of an uncovered grill directly over medium coals for 14 to 18 minutes or till no pink remains, turning once halfway through grilling time. Serve on toasted buns with Mustard Sauce, shredded lettuce, and onion, if desired.
Makes 6 servings.
MUSTARD SAUCE:
In a bowl combine 3 tablespoon mustard with the reserved 1 tablespoon beer and 3/4 teaspoon Worcestershire sauce. Cover and chill till needed.
