| Red Cabbage | 10 small to medium heads |
| Red Wine Vinegar | 1 litre |
| Water | 1 litre |
| Sugar, granulated | 4 cups |
- Remove hearts from cabbage.
- Shred cabbage to the thickness of a shoe lace.
- Mix all ingredients in a large stock pot.
- Simmer, stirring occasionally, until fluids have been reduced by half and cabbage is soft (approx. 1 hour)
