1 kg mutton,
100 g di bacon,
2 garlic cloves,
2 onions,
1 tender celery,
2 carrots,
2 cup red wine,
1 litre tomato sauce,
1 bay leaf,
rosemary,
olive oil,
salt,
pepper.
Flat the mutton chop and stuff with bacon, chopped garlic, sliced onions, rosemary, the bay leaf, salt and pepper.
Roll it and tie with string. In a pan brown chopped onions, add celery and carrots in pieces and add the meat. Pour some wine, dress with salt and pepper and add tomato sauce.
Put some water, cover and keep cooking for about 3 hours, on a low flame. Let cool down and slice.
