Blueberry Snack Bars

1 1/4 cups all-purpose flour, divided use
1/2 cup butter, softened
1/4 cup powdered sugar
2 large eggs
1 cup granulated sugar
1 cup blueberries
1/2 cup sweetened flake coconut
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Preheat oven to 325*F.

Mix 1 cup flour, softened butter, and powdered sugar until smooth. Spread over the bottom of an 8′ square pan. Bake for 20 to 25 minutes.

Mix together eggs, sugar, blueberries, coconut, remaining 1/4 cup flour, lemon juice, vanilla, baking powder, cinnamon, and salt. Spread over the top of the cookie base. Bake for another 30 minutes; cool.

Makes 16 bars.
