3 cups cooked rice
1 (16-ounce) can black beans, drained and rinsed
1 large tomato, seeded and chopped
1/2 cup (2 ounces) shredded Cheddar cheese (optional)
4 green onions, chopped
1/3 cup prepared light Italian dressing
1 tablespoon lime juice (optional)
Combine rice, beans, tomato, cheese and onions in large bowl. Pour dressing and lime juice over rice mixture and toss. Serve at room temperature or chilled.
Makes 6 servings.
