500 g asparagus spears 1 lb
50 ml butter 1/4 cup
50 ml mayonnaise 1/4 cup
25 ml horseradish 2 Tbsp
15 ml fresh chives, chopped 1 tbsp
15 ml lemon juice 1 tbsp
175 ml deli roast beef, sliced thin 3/4 lb
Trim asparagus spears to 6 inches (15 cm) and simmer in enough water to cover for 5 minutes or until tender crisp. Rinse in cold water and pat dry. Blend butter, mayonnaise, horseradish, chives and lemon juice. Spread mixture on slices of roast beef. Place an asparagus spear on each slice and roll up. Cover and refrigerate until ready for use.
