Basic Potato Dumplings

350 g potatoes, peeled, cooked & grated 3/4 lb
1 kg potatoes, peeled & grated 2 lb
125 ml hot milk 1/2 cup
salt to taste
1 egg, beaten

In a large bowl; add grated cooked potatoes, grated raw potatoes, milk, salt and egg. Mix well. Shape into 12 small dumplings using wet hands.

In a large pot of boiling water; add dumplings. Quickly bring back to boil. Cook on medium heat for 25 to 30 minutes or until skewer inserted in dumpling comes out clean. Remove with slotted spoon, drain and serve hot.
