Banana Sweet Potato Pudding

250 ml sweet potato, peeled & cubed
2 medium bananas, sliced
250 ml milk
2 ml coconut extract
1 small cinnamon stick
15 ml frozen orange juice concentrate
2 ml vanilla extract
30 ml slivered almonds

Boil sweet potatoes in water for 20 minutes or until tender. Drain off excess water.

Add bananas, milk, coconut extract, cinnamon stick and orange juice. Cook about 15 minutes or until thick.

Remove cinnamon stick and add vanilla. Puree in blender or food processor until smooth. Serve either warm or chilled, topped with slivered almonds.

Serves 3
