5 medium beets, shredded
1 small onion, finely chopped
1 potato, grated
30 ml vegetable oil 2 tbsp
30 ml white vinegar 2 tbsp
30 ml brown sugar 2 tbsp
15 ml water 1 tbsp
2 ml salt 1/2 tsp
1 ml pepper 1/4 tsp
Place beets in a greased 1 quart (1 L) casserole. Add onion and potato. In a small bowl; stir together oil, vinegar, sugar, water, salt and pepper. Stir into vegetable mixture; cover tightly and bake in a 350 F (180 C) oven for 30 minutes. Stir once or twice during cooking.
