50 ml vegetable oil 4 tbsp
5 ml dried thyme 1 tsp
12 ml sweet paprika 2 1/2 tsp
salt & pepper
4 potatoes, unpeeled & cut into bite size pieces
1.5 kg chicken pieces, skinless 3 lb
375 ml dry breadcrumbs 1 1/2 cup
125 ml all purpose flour 1/2 cup
5 ml dried sage 1 tsp
5 ml dried oregano 1 tsp
150 ml sour cream 2/3 cup
In a small bowl, mix together 1 tablespoon (15 ml) oil, thyme and 1/2 teaspoon (2 ml) paprika. Season with salt and pepper. Brush over potatoes.
Put remaining oil in bowl. In another bowl, mix together breadcrumbs, flour, sage, oregano, remaining paprika, 1 teaspoon (5 ml) salt and 1/2 teaspoon (2 ml) pepper. Turn chicken pieces first in oil and then in breadcrumb mixture.
Spread potatoes and chicken pieces
