Temperature: 375 degrees F. Oven
100 apples (39 lb) apples, eating, fresh, whole A.P.
2-1/2 quart water, hot
1 cup (8 oz) butter or margarine
2 teaspoon cinnamon, ground
1 teaspoon salt
1 gallon (7 lb) sugar, granulated
4-1/2 cups (1 lb 8 oz) raisins
1-1/4 quart (1 lb 4 oz) nuts, chopped
Wash apples; remove cores. Score apples once around the middle to prevent bursting. Mix raisins and chopped nuts. Fill cavity in center of each apple with 1-1/2 tablespoon mixture. Place in pans. Mix remaining ingredients; pour over apples in each pan. Bake 45 minutes or until tender, basting occasionally.
