Baked Apples with Raisin Coconut Filling for 100

Portions: 1 Apple each
Pan Size: 18 by 26-inch Sheet Pan
Temperature: 375 degrees F. Oven

100 apples (39 lb) apples, eating, fresh, whole A.P.
2-1/2 quart water, hot
1 cup (8 oz) butter or margarine
2 teaspoon cinnamon, ground
1 teaspoon salt
1 gallon (7 lb) sugar, granulated
4-1/2 cups (1 lb 8 oz) raisins
3 cups (8 oz) coconut, prepared, sweetened, chopped

Wash apples; remove cores. Score apples once around the middle to prevent bursting. Mix raisins with coconut. Fill cavity in center with 1/2 tablespoon mixture. Place in pans. Mix remaining ingredients; pour over apples in each pan. Bake 45 minutes or until tender, basting occasionally.
