Bacon and Egg Bean Salad

1 kg whole green beans, cooked to tender crisp & cooled 2 lb
125 ml medium onion, chopped 1/2 cup
75 ml salad oil 1/3 cup
50 ml vinegar 1/4 cup
salt & pepper to taste
4 eggs, hard cooked & chopped
50 ml mayonnaise 1/4 cup
5 ml prepared mustard 1 tsp
10 ml vinegar 2 tsp
1 ml salt 1/4 tsp
4 bacon slices, crispy cooked & crumbled
crisp lettuce , torn into bite-size pieces

In a large bowl, combine beans, onion, oil, 1/4 cup (50 ml) vinegar, salt and pepper to taste. Toss. Cover and chill.

In a small bowl, mix eggs, mayonnaise, mustard and 2 teaspoons (10 ml) vinegar and 1/4 teaspoon (1 ml) salt. Cover and chill.

Just before serving, drain bean mixture thoroughly. Toss with bacon. Serve over lettuce. Top with a spoonful of egg and mayonnaise mixture.
