Sweet & Sour Red Cabbage

45 ml vegetable oil 3 tbsp
1.5 L red cabbage, shredded 6 cup
3 medium unpared apples, cubed
75 ml brown sugar 1/3 cup
75 ml vinegar 1/3 cup
75 ml water 1/3 cup
salt & pepper to taste
2 ml caraway seeds (optional) 1/2 tsp

Heat oil in large skillet or saucepan, add cabbage and apple. Combine brown sugar, vinegar, water, salt, pepper and caraway seeds, pour over cabbage. Cover pan tightly, cook over low heat, stirring occasionally for 15 to 20 minutes, or until cabbage and apple are tender.

Serves 8
