2 garlic cloves, minced
75 ml olive oil 1/3 cup
1 large lemon, finely grated zest and juice

2 cans chickpeas, drained & rinsed (19 oz / 540 ml)
50 ml packed fresh mint, chopped 1/4 cup
45 ml red onion, finely chopped 3 tbsp
30 ml fresh parsley, chopped 2 tbsp
175 ml feta cheese, crumbled 3/4 cup
In a small bowl, whisk together garlic, oil, lemon zest, lemon juice and pepper to taste.
In a large bowl, gently combine chickpeas, mint, red onion and parsley. Pour dressing over chickpea mixture. Sprinkle feta over top and toss to combine. Taste and season with salt and additional pepper, if desired.
