Chive Mashed Potatoes

1 kg yellow flesh potatoes, peeled & cut into chunks 2 lb
125 ml milk 1/2 cup
30 ml butter 2 tbsp
250 ml ricotta or cottage cheese 1 cup
125 ml fresh chives, chopped 1/2 cup
salt & pepper to taste

Place potatoes in large pot of cold water. Cover and bring to boil over high heat. Reduce heat and simmer for 15 to 20 minutes or until potatoes are tender. Drain.

In a small bowl, combine milk and butter. Microwave on high for 30 seconds or until milk is warm and butter has melted. Add to potatoes. Mash with potato masher until smooth. Stir in ricotta and chives until thoroughly combined. Season to taste with salt and pepper.
