The Sampson Eagon Inn Sugar & Spice Baked Apples

Serve with a sprinkle of honey wheat germ and heavy cream.
Also great as a dessert with a scoop of Haagen Dazs Honey Vanilla Ice Cream.

Medium-sized golden delicious apples – 1 per person

Sugar & Spice mixture: (This recipe makes about 2 cups)
1/2 lb light brown sugar
1/2 lb dark brown sugar
2 teaspoons cinnamon
1 whole nutmeg – freshly grated
1/2 to 1 cup coarsely chopped pecans

Mix sugars, spices and nuts very throughly. Store in an air-tight container in dry place.

Core and peel apples. Place each apple in an individually microwaveable ramekin. Lightly pack about heaping tablespoon of sugar mixture in each apple’s center and sprinkle some on the top and sides. Cover with microwaveable plastic wrap.

Cooking time will depend on the number of apples you are cooking and the wattage of your microwave. Microwave on high:

1 apple – 6-6-1/2 min.
2 apples – 7 min.
4 apples – 8 min

Ready when springy to the touch. They will also hold in a warm oven for 30 to 45 minutes.
