Braised Red Cabbage for 100

Yield: 100 portions

Ingredients Measure
Red Cabbage 10 small to medium heads
Red Wine Vinegar 1 litre
Water 1 litre
Sugar, granulated 4 cups
  1. Remove hearts from cabbage.
  2. Shred cabbage to the thickness of a shoe lace.
  3. Mix all ingredients in a large stock pot.
  4. Simmer, stirring occasionally, until fluids have been reduced by half and cabbage is soft (approx. 1 hour)
