Sun Dried Tomatoes in Mashed Potatoes

4 potatoes, peeled & cubed
150 ml milk 2/3 cup
50 ml sun dried tomato bits 1/4 cup
50 ml fresh basil, chopped 1/4 cup
salt & pepper to taste

Cook potatoes until tender. Meanwhile, in small saucepan, heat milk and tomatoes (do not boil); set aside. Drain potatoes thoroughly. Mash potatoes with electric mixer or potato masher. Mix in basil. Gradually mix in milk mixture until potatoes reach desired consistency (do not overbeat.) Season with salt and pepper. Stir gently over low heat just until heated through, adding a small amount of additional milk, if needed.
