3/4 pound catfish
2 teaspoons Cajun seasoning
2 teaspoons olive oil
1/2 cup chopped onions
1/2 cup chopped sweet green peppers
1 teaspoon minced garlic
1 can (14-1/2 ounce) whole tomatoes, chopped
3/4 cup water
1 cup couscous
Sprinkle fish with Cajun seasoning. Heat oil in a nonstick skillet. Add onions and peppers; stir-fry until vegetables begin to brown, about two minutes. Stir in garlic, tomatoes and water, and bring to a boil. Cover and simmer over low heat for five minutes.
Stir in couscous. Arrange fish over couscous. Cover and cook until fish turns opaque, about 10 minutes. Enough time for a cat nap. (Just make sure someone else is watching the skillet.)
