Orange Frozen Yogurt

350 ml orange juice
1 teaspoon gelatine
2 tablespoons honey
1 orange; zest only
100 g sugar
350 g natural yogurt
mint sprigs and orange zest; to decorate

Yield: 4 servings

Switch freezer onto fast freeze. Place 2 tablespoons of orange juice in a small bowl. Sprinkle over gelatine and stand for 5 minutes. Dissolve over a pan of hot water.

Stir in honey and remaining orange juice, orange zest and sugar. Leave until cold then gradually stir orange mixture into yogurt. Pour into a metal baking tin and place in the freezer for 1-2 hours or until almost solid. Break frozen mixture into pieces and place in a food processor. Process until soft. Repeat this process twice. To serve, place in the refrigerator for 30 minutes to soften before serving. Decorate with mint sprigs and orange zest.
