King Island Beef

1 big prime beef rib fillet
Rock salt

Make a bed of rock salt in baking tray and heat in a hot oven until hot. Put beef on bed of salt and cook for 20 – 30 minutes depending on size and desired rarity of meat. Stand and slice. Serve with sauce/gravy of choice, potato gratin (egg, cheese and potato pie !!!) and green salad.
