MINT RELISH
375 ml fresh or canned pineapple 1 1/2 cup
75 ml green onions, finely chopped 1/3 cup
45 ml fresh mint, finely chopped 3 tbsp
25 ml lime juice 2 tbsp
pinch each salt, pepper & white sugar
FISH
25 ml all-purpose flour 2 tbsp
pinch each salt & pepper
4 halibut fillets
15 ml extra-virgin olive oil 1 tbsp
MINT RELISH: In a small bowl; mix pineapple, onions, mint, lime juice, salt, pepper and sugar; set aside.
FISH: Mix together flour, salt and pepper; dip fish fillets into flour to coat both sides. In a nonstick pan; heat oil over medium-high heat; cook fish for 1 1/2 to 3 minutes per side or until fish flakes easily when tested with fork. Serve topped with Mint Relish.
