12 large spinach leaves
1 kg whole salmon 2 lb
15 ml fresh dill, chopped 1 tbsp
2 ml each salt & pepper to taste 1/2 tsp
250 ml cold water 1 cup
7 ml margarine, melted 1 1/2 tsp
150 ml green onions, sliced 2/3 cup
1 clove garlic, minced
Arrange spinach leaves on bottom of 13 x 9 inch (3.5 L) baking dish. Top with salmon; sprinkle with dill, salt and pepper. Pour water and margarine over salmon. Top with green onions and garlic. Cover tightly with foil.
Bake in preheated 325 F (160 C) oven for 25 to 30 minutes or until salmon flakes easily when tested with fork, bsting twice. Arrange salmon with spinach on serving platter with pan juices.
